Winemaking
The harvest is half done by machine and the other half by hand. The grapes are harvested very early in the morning, as fresh as possible, to promote the extraction of primary aromas.
As for the reds, semi-carbonic fermentations are carried out with a variable fermentation time depending on the daily tasting of the wines.
It is Marie Pascaud who carries out the last stabilization treatments for the wine before bottling. This last step is done in optimal conditions with the latest generation of technical equipment to preserve the quality of the wines.

Tasting Advices
Food and wine pairing: This wine will go very well with red tuna cooked in red and black berries and thin slices of orange. With cream desserts such as a black forest.
